After a nice little break in a super hot Spain + coming back to a 30 degrees England I am still in holiday mode so what better way to continue the holiday vibes then by carrying on eating and drinking as if I was still away! Plus why not live life like a constant holiday?!
I decided to rustle up some tasty Prawn + Chorizo skewers with a salad and Homebase aioli + salad dressing. I have a bad habit of finding recipes I like then losing them never to find them again, so I thought I'd start sharing some of my favourites + keeping a log of them so I can cook them over + over again, until I learn them off by heart of course...
This is a nice + easy quick but tasty dish, just throw the marinade ingredients and prawns into a bowl, leave for an hour pop on a skewer with the chorizo chunks then pop on the grill.
Ingredients
300g Raw King Prawns
Small Handful Flat Leaf Parsley
Small Handful Fresh Basil
Small Handful Coriander
3 Large Garlic Cloves minced
Juice of 1 Lemon
3 tbs Extra Virgin Olivia Oil
Sea Salt + Freshly Ground Black Pepper
I served mine skewers with a simple salad with a olive oil, mustard + honey dressing and chips
